Toyota Previa Campers
There are a number of ways to set up a campervan and the Previa is a great platform to start with. It is used my many vancamper rental companies in the world, likely due to the availability of the Previa and low price. Because of this, there are many Previa campervans out there and plenty of examples of how to set one up.
Jucy Choppa
Jucy is a vancamper rental service in Australia, New Zeeland and in the US. They use the Previa for their smaller vancampers. They have a few great examples of tried and true camper setups which work perfect for the Previa.
Jucy rental van
The Jucy Choppa retains the front and very rear seats to allow seating for 5 with approved seats and seat belts. It incorporates a rear kitchen with a pull out stove, sink and electric fridge. Behind the front seats is a bench which easily expands into a bed which incorporates the rears seats. Roll up curtains with snaps, a second battery, LCD DVD player and removable table completes the campervan setup. An optional roof top tent allows for 4 to sleep comfortably.
A similar setup is simple enough to install and fabricate. It can also be set up to be removable so that you can use your van for your non-camping needs.

SpaceShips Rocket 2
The Rocket 2 used by SpaceShips Rentals uses a extend a bed behind the mid seats. The bed can be extended forwards to allow for seating behind the mid seat with the mid seat facing backwards. The bed can also be extended rearwards out the back of the van and an awning used to protect your head from the elements. There is a chiller bag and a swing out cooker for your kitchen.
Flicker 72157603931936553 This campervan design uses a pull out rear extension which holds up a board for your bed. A snap on or pull over tent covers the rear to protect you from bugs, sun or rain. The rear tailgate window becomes a sunroof if you sleep with your head to the rear.

"Lucy" uses a 12 inch raised platform which allows of under mattress storage. Note how one of the boxes can be removed to allow you to tilt the left had front seat back to check the oil.
'Lucy" has a rear 12V electric chiller box and fully tiled kitcheny which allows for a gas double burner.
