Roquette, or rocket, arugula is a leafy green with a strong spicy taste. It has a mild nutty flavor at baby leaf stage and a pungent peppery flavor when mature. Plants are 8 to 39 inches tall with deeply pinnately lobed leaves and white flowers. Roquette is widely popular as a salad vegetable. It can also be steamed or pureed and added to soups. Best as a spring or fall crop.
