Directions

Sausage and Black-Eyed Peas Cornbread Skillet: 1 pound fully-cooked smoked sausage, cut into 1/4-inch thick slices. 1/2 cup chopped onion. 1/2 teaspoon minced garlic. 2 (15 oz) cans black-eyed peas, drained. 1 (14.5 oz) can chicken broth. 1 (10 oz) package frozen chopped collard greens, thawed and squeezed dry. 1/2 teaspoon hot pepper sauce. 1 large egg. 1 cup Martha White self-rising enriched white corn meal mix. 3/4 cup buttermilk. 1/4 cup vegetable oil. 2 teaspoons sugar. 1 cup shredded cheddar cheese. Heat: Oven to 400 degrees F. cook sausage and onion in 12-inch ovenproof skillet over medium-high heat until sausage is browned and onion is tender, stirring occasionally. Stir in garlic; cook 30 seconds. Stir in peas, broth, greens and hot pepper sauce. Bring to a boil. Reduce heat to low. Simmer 10 minutes, stirring occasionally. Whisk egg in large bowl.
