Manioc starch (or flour) in Brazil comes in both sweet (doce) and sour (azedo) versions. This sweet version is used in many traditional Brazilian desserts dating back into its colonial days. Desserts made from manioc flour have a distinctive heavy and slightly gummy texture. It's gluten-free and it can be used in combination with other flours to make a gluten-free baking mix.
Yoki is probably the leading Brazilian brand for this kind of dry goods. They have everything from corn meal to self-rising flour as well as some of the more exotic ingredients for traditional Brazilian cooking. You will find their products in virtually every Brazilian supermarket.
I love this product for making gluten free stuff. If you aren't familiar it is "sour" or "fermented" tapioca starch. It gives your breads and baked goods some of the spring and stickiness that is missing in so many gluten free baked goods. The sour taste is better for sourdough and savory type recipes so avoid it in sweet stuff. The recipes on the bag are not in English, so you'll have to use your own or translate.
