I’ve purchased this vanilla twice. The first batch was AMAZING: it smelled really good and gave my cakes and icing the best vanilla flavor. The second batch was TERRIBLE. It smells rancid and ruined the flavor of my vanilla cake :( I don’t understand why these products aren’t consistent, but it’s really frustrating, as I thought I had found a good clear vanilla that didn’t smell like rubbing alcohol :(

Emulsions are superior in every way for your culinary needs. They are thick, concentrated with flavor, and will not evaporate with heat when baking or cooking with them. I recently tried an emulsion rather than an extract for the first time, and I am sold on them and will no longer be using an extract if an emulsion is available. The scent is vibrant, and so is the taste.

Pistacho flavor isn't that strong

I make cheesecake and need to use two tablespoons of this product to really get the flavor of pistachio. Product states 1 teaspoon of Emulsion is equal to 1 teaspoon of extract, but in reality, that's simply not true.
With extracts by McCormick, I use 1 teaspoon maple extract. 2 teaspoons for strawberry. 1tsp for orange. Fine and dandy, but with this pistachio flavor I have to use 1 tablespoon MINIMUM and two tablespoons to finally get a nice pistachio flavor.

Tldr; If you don't mind adding more to get more flavor of pistachio, this product is fine. If you want something that gives you more for your money, find something that is more concentrated... and then promptly tell me about it 🤣
