Solanka

Hearty soup from Soviet cuisine to warm you up in cold winter days- Solanka (H1 tag)

Solanka is a hearthy soup that is full of taste. It is known and loved in most of ex-Soviet countries. I have special memories connected with cold winter days and Solanka, it warms up not only your body, but heart as well.

Ingredients (h2):

solanka

5 carrots
5 potatoes
2 onions
2 garlic cloves
4 pickles
120 gr salami
200 gr pork
1 tbsp vinegar
2 tbsp lemon juice
2 cubes pork bouillon
salt, pepper
chives and créme fraîche for serving

Preparation(h2):

Cut carrots, pickles and potatoes in straws. Cut pork in cubes, salami in small straws. Chop onions and garlic.
Start by frying salami, when it is crunchy remove it from frying pan and put aside. Fry pork cubes in the fat that is left on the frying pan. When pork cubes are turning golden remove them from frying pan.
Boil 2 l of water and add bouillon cubes. First add carrot straws, after 10 min add potatoes after 10 min add the rest of ingredients, including the salami and pork cubes.
Boil for 25 min, add salt and pepper (as you prefer).

Serving(h2):

Serve with créme fraîche and freshly chopped chives.
