Pointed Cabbage Gratin

Ingredients

Pointed cabbage 1
Butter as required
Salt & pepper as required
Egg (medium) 1
Milk 250ml
Double cream 150ml
Parmigiano reggiano as required
Finely chopped parsley as required

Method

This is a soft and tender pointed cabbage.

Remove the centre core and shred into 1.5cm strips.

Put the butter in a pan and fry the cabbage on low heat until soft, adding a pinch of salt and with the lid on. Be careful it doesn't burn.

Put the egg, milk, cream, salt & pepper in a bowl and mix.

Rub some butter inside an oven dish and put in the cabbage, spread out evenly. Pour in Step 4 then cover liberally with grated cheese.

Put into a preheated oven 190C and bake for 30 minutes until nicely browned.

Sprinkle with finely chopped parsley just before serving.

Tips & Note

Use your favourite cheese (mozzarella or cheddar) if you like. I personally recommend to use a blue cheese like Stilton or Gorgonzola if you 're making this for adults.
